New York Shuk is the Brooklyn pantry brand of Ron and Leetal Arazi, a husband-and-wife team who met working in a restaurant kitchen in Israel. In 2013 they opened a "couscous booth" at Smorgasburg, the open-air food market in Brooklyn, and grew it into a line of Middle Eastern and Sephardic pantry staples. The name comes from the Hebrew word for market.
Ron, the culinary director, grew up in a Jewish Moroccan-Lebanese family in Israel and trained as a chef in French and Israeli kitchens. Leetal, the CEO and creative director, studied visual design at University of the Arts London and graduated from culinary school in Israel; her grandfather was a professional baker and her Turkish grandmother a serious home cook.
Their Signature Harissa is based on Ron's grandmother's recipe: a medium-spicy blend of rehydrated dried chiles with lemon, garlic, coriander and cumin. ModernTribe has carried it alongside their za'atar, ground sumac, shawarma spice and Kafe Hawaij, a Yemenite coffee spice of cardamom, ginger, cinnamon and clove.
