I've switched to sourdough challahs, and one of the problems I had was the braids not holding together well. This pan takes care of that by eliminating the braiding. Watch the baking and/or time the first time you use it--I found the suggested baking time to be longer than needed and I didn't need to turn them out of the pan to get browned.
These are also nice roll pans for Rosh Hashanna "crown" bread.
